With only four ingredients, potato soup is an easy and filling meal/side. Inexpensive ingredients give a great base and give you a lot of food for your dollar. 3 pounds of potatoes
4 large onions
4 ounces butter
128 ounces chicken broth

Start by small dicing three pounds of potatoes and then small dice four large onions. Melt four ounces of butter in a large pot. Add the onions and then cook on low for 10 minutes. While the onions cook, heat 128 fluid ounces of chicken broth. Add potatoes to the onions and butter, then cook on low for 10 minutes. Add the chicken broth to the potato, onion, and butter mixture. Bring everything to boil and then simmer for 25 minutes. Blend with an immersion blender or in batches with a traditional blender. Finally, season to taste, garnish with your favorites, and serve.
